From Waste Beer to Dragon Hot Sauce: The Story of 7 Bridges Zero Waste Mission

At 7 Bridges, we believe great beer should do more than just taste good. It should do good.
Since 2017, 7 Bridges Brewing Co. has been brewing award-winning craft beer in Đà Nẵng, Việt Nam, growing from a small brewery into a national craft beer company with taprooms across Việt Nam and distribution reaching across Asia and beyond. In 2025, our Heritage Superdry was crowned Champion Beer of Asia, while 7 Bridges was named Champion Small-Sized Brewery of Asia at the Asia Beer Championship.
But awards are only one part of the story. From the beginning, 7 Bridges has believed that brewing can be a platform for something bigger: creativity, community, and positive environmental action. That belief is at the heart of our Zero Waste Mission.
Why Zero Waste?
Brewing creates more than beer. Every batch leaves behind spent grain, yeast, surplus beer, fruit peel, tank bottoms, foam, and other by-products that are often treated as waste. We saw something different.
We see value where others see waste.
To us, zero waste is not just a goal. It is how we work. It means looking at the brewing process from start to finish and asking a simple question: what value is still here?
That question has shaped years of experimentation at 7 Bridges. Instead of throwing useful ingredients away, we find ways to turn them into something new, practical, and delicious. It is the idea behind 7.Zero: our growing range of products made from the parts of brewing and F&B operations that would otherwise be overlooked.
The Zero Waste Hero: Dragon Hot Sauce
Dragon Hot Sauce is the heart of the 7 Bridges Zero Waste Mission in one fiery little bottle.
The story starts with beer. Not the perfect pint poured across the bar, but the beer that is left behind during production: tank bottoms, foam, cleaning purge, and surplus beer that cannot be served. Instead of pouring it down the drain, we re-ferment it into beer vinegar using a vinegar mother — a natural culture that turns alcohol into a rich, tangy vinegar with hoppy undertones.
That beer vinegar becomes the base of Dragon Hot Sauce.
Layered with fresh chillies, garlic, and spices, Dragon Hot Sauce is bold, bright, and full of character. It is designed to be a proper “use it on everything” sauce: punchy enough for spice lovers, but balanced enough that the flavour still shines through.
It is also a perfect example of what zero waste can be. Not a compromise. Not a novelty. A genuinely great product with a better story behind it.
Dragon Hot Sauce begins with waste beer and ends up back on the table — poured over pizza, wings, burgers, grilled meats, and anything that needs a proper hit of heat.

Whole Grain Mustard & American Yellow Mustard
Made with mustard seeds, spices, and 7 Bridges Beer Vinegar. These mustards bring a classic flavour with a zero waste twist, served across our taprooms with hot dogs, grilled sausages, nachos, and more.
Bread & Butter Pickles
Crisp, sweet, and tangy pickles made using 7 Bridges Beer Vinegar. A crunchy classic reimagined through the Zero Waste Mission and used across many 7 Bridges dishes.
Spent Grain Crackers
Made with spent grain flour from the brewing process. Packed with fibre, protein, and a hearty crunch, these crackers give new life to the grain left behind after brewing.
Spent Grain Granola
Made with 7 Bridges spent grain, coconut, and honey. A nutritious, flavourful tribute to both the Zero Waste Mission and the signature flavours of Việt Nam.
More Than a Product Line
The Zero Waste Mission is not a side project. It connects the brewery, kitchens, taprooms, events, and partners into one larger system.
You can see it in our food, where spent grain finds a new home in pizza dough and snacks. You can taste it in Dragon Hot Sauce, where surplus beer becomes flavour. You can see it in our taprooms, where sustainable design, recycled materials, and local partners help us keep pushing the mission further.
