Our journey began in Đà Nẵng, where we recognized the potential of craft beer to be more than simply a drink but something to serve as a platform for positive change. As CEO Saori Ushimi shared in an interview with Vietcetera, sustainability has always been at the core of 7 Bridges Brewing Co. “We’ve always been conscious of our environmental footprint,” she said. “From the very beginning, we wanted to build a brewery that was not only known for great beer but also for its commitment to reducing waste and promoting sustainability.”
This ethos led to the birth of our Zero Waste Mission. We looked at the by-products of brewing—spent grains, left over beer, fruit peels, and even waste yeast—not as waste, but as resources waiting to be upcycled. By creatively repurposing these materials, we’ve developed a range of products that reflect our dedication to sustainability and innovation.
Zero Waste Mission: Transforming By-Products into Value
Our Zero Waste Mission goes beyond just brewing—it’s a commitment to transforming what others see as waste into something valuable. Leading the charge is our Dragon Hot Sauce, a fiery blend made from the by-products of our brewing process, infused with the bold flavors of local chili peppers. This hot sauce has quickly become a favorite, not just for its heat, but for the sustainable story behind it.
Building on the success of our Dragon Hot Sauce, we’re excited to introduce our latest additions: the Brewer’s Mustard line. Available in three distinct flavors—Black Hot Mustard, Medium Hot Mustard, and American Yellow Mustard—these mustards are crafted using beer vinegar made from leftovers of our brewing process. Each flavor offers a unique taste experience, adding a new dimension to your meals while embodying our commitment to upcycling.
These products are not only available at our taprooms but also at our events, including our flagship charity beer festival, Beer United. The fourth edition of this festival, held in Hội An, was a celebration of the craft beer community and sustainability, with all profits going to local charities including Vietnam Zero Waste Alliance. The funds raised at Beer United help support initiatives that align with our values, such as reducing waste and promoting environmental education.
